Research Interests
I hold a Bachelor's degree in Animal Sciences and a Master's degree in Food Science and Technology from Colombia. I am currently a PhD researcher at Teagasc and the University of Limerick, where I investigate the role of post-translational modifications in the structure–function relationship and digestion of dairy proteins. My research interests include dairy protein functionality, food processing, and dairy science.
