Biography

Edith is a registered nutritionist and public health researcher with a strong interdisciplinary background in nutritional epidemiology, health promotion, and metabolic disease research. Currently a Research Assistant at the University of Limerick, School of Allied Health, Edith is working on the international research project “IGNITE.” In this role, she is responsible for analysing survey data collected from the use of Digital Health Systems across Food Security and Nutrition programmes in Uganda, and for supporting the analysis and synthesis of focus group discussion transcripts for Work Package 2 and Work Package 3. This work has strengthened her expertise in digital health research, implementation science, mixed-methods analysis, and the application of technology to improve nutrition programme delivery in resource-constrained settings.
Edith holds a Bachelor of Public Health Nutrition from the University of Health and Allied Sciences (Ghana), a Master of Public Health in Population, Family and Reproductive Health from the University of Ghana, and a Master of Science in Nutritional Sciences from the University of Calabria, Italy.
Edith's research interests lie at the intersection of dietary patterns, metabolic disorders, digital health, and population health, with a particular focus on metabolic syndrome, liver health, evidence synthesis, and the use of digital health systems to strengthen nutrition and food security programmes. She has contributed to both quantitative and qualitative research in low- and middle-income settings, with experience spanning hospital-based nutrition practice, national public health institutions, and academic research environments.
