Abstract
The general nutritional role milk proteins and developments with anti-cancer immunomodulatory, mineral-binding and hypotensive proteins and peptides from bovine milk, are discussed. The two main protein groupings present in bovine milk are the caseins and the whey proteins. Exogenous immunomodulatory peptides enhance or supress the proliferation of lympocytes. Milk proteins have also been shown to modulate the activities of non-lymphoid cells such as macrophages, granulocytes and natural killer cells.
