Abstract

Innovative or emerging technologies are of utmost importance in enhancing various production processes in the food industry. Some of the innovative technologies presented and emphasised in this chapter are artificial intelligence, ultrasound technology, modified atmosphere packaging and extrusion technology, including key findings/examples of such innovation and potential impact. An array of novel ingredients developed either for potential use in the industries or for direct consumption is also presented herein. A futuristic roadmap to enhance sustainable agricultural and food production practices is presented herein. This information is relevant for food industries targeting the production of new food or the modification of existing food products or ingredients using innovative technologies. Likewise, information on sustainable agriculture and food production presented herein is a driver for global food security.
