Thermostable phytase enzyme

Abstract

Phytase catalyzes the hydrolytic breakdown of phytic acid or phytates. Addition of the enzyme to livestock feeds allows ruminant and nonruminant animals to utilize the phosphorus. A phytase that is more thermostable than commercial enzymes is found from Rhizopus oligosporus. Optimum conditions for the activity of the enzyme are 65 degrees C and pH 5.0. It tolerates acid well, retaining full activity after incubation at pH 2.0 for six hours.
