Abstract

The prolongation of food product shelf life is a technological necessity to satisfy customer demands. In this regard, there is a growing focus on packaging strategies. Vacuum packaging is an innovative concept that has gained significance as a preservation method to enhance the shelf life of food products. Vacuum packaging radically transforms the preservation of perishable foods. This approach substantially diminishes the risk of microbiological and chemical deterioration by preventing air contact with the food. Vacuum packing has become an essential solution and has recently been incorporated into multiple areas of the food business, ranging from agricultural to retail. Currently, companies possess a variety of sophisticated systems, equipment, and machines, each with distinct requirements aimed at enhancing the vacuum packaging process for various food types. This chapter carefully assesses the current knowledge of vacuum packaging to enhance comprehension of the topic and propose additional research options for the appropriate application of these technologies in marketing safe foodstuffs.
